What makes Hazy IPAs sweet? Especially juicy IPAs, is sugar or fruit added?? I love them and trying to figure this out, thanks!
Good question! There could be a lot of factors, from a higher finishing gravity sometimes, so more sugar left over, to more hops being added on the cold side leading to more oils and different forms of bitterness vs the traditional way. Or even the impact of the yeast and how it changes our perception of mouthfeel and bitterness. Brewer can also fruit hazies and add other forms of flavoring but depending on when they add it, some of that sugar can be eaten for fermentation.

What does any of this mean?
Zinc is an essential nutrient for yeast to do its job of turning sugar into alcohol.
zinc is great for fermentation alongwith magnesium, but 91 percent attenuation leaves nothing in the beer......
Can't wait to test this out on the Homebrew level!!

how are we calculating the 1.15 g /ml cell density ? whats the reason for that number?
It's a rough rough estimate as a 1:1 ratio of volume to weight is for water, plus a 10-15% increase due to cell weight. Another route can be to dilute the weight of yeast to get a weight to pitch instead of using a volume for the serial dilutions!

Either way works! It's a whole lot easier than guessing if you have to move up or down to focus if the deck is in the middle
Do you need a special slide to count cells and are these available to homebrewers?

Great conversation! I couldn’t agree more with the importance of freshness on this style. I recently had a friend visit Germany and brought back a Weihenstephaner Hefeweizen in his luggage. We compared the ones he brought back to the ones we bought at the store down the street and the difference was stark. You could tell the beers were related, but they were completely different. The imported one was worse in every way, probably due to long storage or improper transit methods.
Currently pressure fermenting with this yeast at 20°C and 20 PSI. I'm on day 8 and plenty of sugars left. Is this a slow blend? Is it worth waiting or did it die off?

I've been brewing for almost 30 years now. I can remember being impressed with White Labs when they first came on the market and it is very reassuring to see White Labs is still working hard to bring innovations to the brewing community. Those of you who weren't brewing last century really don't know what those dark ages were like. Hey, at least someday you'll be able to tell the youngsters "you that started brewing after PurePitch really don't know how bad it was".
